PRODUCTION


 

The production process of tomato powder is as follows: tomato → cleaning → picking → crushing → beating → vacuum concentration → sterilization and canning

 

(1) Raw material selection
Choose fresh, ripe, bright red colored, and pest free tomatoes as raw materials.
(2) Cleaning
Remove sediment, residual pesticides, and microorganisms attached to the fruit.
(3) Picking
Remove rotten, diseased or discolored tomatoes.
(4) Thermal fragmentation
The crushing methods for tomatoes include hot crushing and cold crushing. Heat crushing refers to the process of immediately heating tomatoes to 85 ℃ after crushing them. Due to the thermal crushing method, the pectin esterase and polygalacturonase in tomato pulp can be passivated in a timely manner, resulting in a high retention of pectin substances and a higher consistency of the resulting tomato product.
(5) Beating pulp
The purpose of beating is to remove the skin and seeds of tomatoes. Double or triple pass beating machines are used for beating. The mesh size of the first beating machine is 0.8-1.0 centimeters, while the mesh size of the second beating machine is generally 0.4-0.6 centimeters. The speed of the beater is generally 800-1200 revolutions per minute. The amount of skin residue obtained after beating should generally be controlled between 4% and 5%.
(6) Vacuum concentration
The methods of concentration include vacuum concentration and atmospheric pressure concentration. Due to the high concentration temperature, the tomato slurry under normal pressure will experience a decrease in color and flavor due to heating, resulting in poor product quality; The temperature used for vacuum concentration is around 50 ℃, and the vacuum degree is above 670 millimeters of mercury.
(7) Drying of tomato concentrate
There are many drying methods for tomato concentrate, including freeze drying, expansion drying, drum drying, foam layer drying and spray drying. The tomato powder produced by our company is processed by the advanced spray drying technology at present.

 

THE MEANING OF PRODUCTION


 

The moisture content of tomatoes is quite high, reaching around 95%. Few other fruits and vegetables have such a high moisture content. Therefore, for every 1kg dry weight tomato packaged, transported, and stored, it needs to be packaged, transported, and stored with about 19kg of moisture. For consumers, for every 1kg dry weight tomato they purchase, they also have to bear the cost of about 19kg of water. If tomatoes are processed into tomato powder, it can greatly save packaging, transportation, storage, and consumption costs. Although concentrated tomato products such as tomato sauce have already removed 3/4 or more of the moisture, there is still 2-3kg of moisture per kg of dry weight of tomatoes. In addition, due to the higher solid content of concentrated tomato products, their viscosity also increases. Therefore, further reduction of moisture through evaporation will be very difficult, resulting in heat waste and increased product costs. Moreover, during the subsequent concentration of tomato pulp, due to its presence of cellulose and other components, it is prone to scorching. The longer the concentration time, the worse the color and flavor, which seriously affects the quality of tomato concentrate products. In addition, tomato concentrates with high solid content are prone to quality changes during storage, especially in areas with high temperatures. If tomato sauce is processed into tomato powder, it can greatly reduce packaging and sales costs, thereby offsetting production costs during drying.
 

In addition, due to its high moisture content and thin and juicy fruit skin, tomatoes are prone to decay and spoilage under the influence of microorganisms, making them less resistant to storage and increasing the loss rate of tomatoes. According to reports, the decay rate of locally produced tomatoes in China is as high as 50%. Scientists are racking their brains to improve their storage life and reduce storage losses. If it is processed into tomato powder, it can reduce the chance of microbial growth and be stored at room temperature for a long time, thereby extending the supply season of the product and balancing the peak production and sales.
